This is a follow-up PR to PR #939

Sedona docker images are now available on Sedona official DockerHub repo: https://hub.docker.com/r/apache/sedona

1. This PR is to update the reference links used in the documentation.
2. This PR also adds a new Jupyter Notebook example which uses the GeoParquet format of Overture Maps data generated by Apache Sedona.
