Proposed changes

This PR resolves the libxcrypt dependency issue described in #767. It also:

• modifies docs/ to update the install process so that it includes libxcrypt (build from source failing: no such file or directory <crpyt.h> #767)
• modifies .github/workflows/test-build-from-source.yml to include libxcrypt (build from source failing: no such file or directory <crpyt.h> #767)
• modifies envs/ environment files to fix dependency issues causing the build failures in install via environment files failing #769

reverted any changes to env files because addressing the env files deserves its own discussion, see #779
