chore: Update axum 0.7

• Updates Axum to 0.7, and its related crates. Removes hyper dependencies, several Axum generics, and uses Axum's new Body type. Axum CHANGELOG
• Handle different StatusCode implementations due to being pinned on reqwest@0.11.20 Updating reqwest to 0.11.22 causes macos build failure, requires SystemConfiguration #686, opting for http@1's version (and Axum's).
• Update axum-tracing-opentelemetry to 0.16, the version compatible with Axum 0.7+
