Fixed myst version to less than 1.0.0 (fixes graph squashing) #7356

Description

In a Hackathon at PyData 2024 I amended the pip requirements and conda environments to pin myst-nbc version below 1.0.0 (which fixes known issue with graph plots being squashed in docs).
