Can someone help solve this odd quirk with Appcenter

I have a react native app setup to build through Appcenter.

All appears to be working correctly and I have the env variables setup within the Appcenter build configuration.

However, a strange encoding is being appended to my env variables in the final build. For instance I have a have an env variable such as:

SERVER_URL=https://example.com/api

Then this is used within the app like

import { SERVER_URL } from "@env";

export const sendServerData= async (data) => {
    try {
        const response = await fetch(`${SERVER_URL}/sendServerData`, {
            method: 'POST',
            headers: {
                'Content-Type': 'application/json'
            },
            body: JSON.stringify({
                data
            })
        });
        const response = await response.json();
        console.log(response);
    } catch (error) {
        console.log(error)
    }
}

However, checking the logs on the server, the requests are coming through as

https://example.com/api%E2%80%9D/sendServerData

This is suggesting that at some point, a right double quotation mark is being encoded into the variable. But for the life of me, I can't see where?

EDIT - Just to add, everything works perfectly when built locally, this is exclusive to Appcenter, I just wanted to try and see if anyone else had experienced this.

This is a non-issue, I found the problem and it's not related to this package!
