finalize and document Zenodo extraction

Hey colleagues, please finalize and document the metadata extraction from Zenodo asap.
Having the data available will allow us to generate statistics such as

• no. of submissions per country
• total no. of submissions and/or per repository
• no. of submissions per author etc.
