Environment - LiveEurope vs LiveUnitedStates

Hi there,
Our app(s) currently have the environment live but since it is expired what environments should we set for our apps ?
Our apps are majorly active in European and American markets, but our BE uses API for the default European endpoints.
I am not able to understand the usecase of different environments, so the question is should we use Environment.LiveEurope for both apps OR should we use Environment.liveEurope and Env.liveUnitedStates for our apps in Europe and America respectively OR it does not matter which one we use ?

We recommend merchants to use the environment as closest to the shopper as possible to decrease latency, however using just EU/US is fine as well.
You only should avoid mixing environments.
