Add thumbnail to Planet stac output #46

The current Planet converter doesn't include a thumbnail. Unfortunately a planet order doesn't automatically ship with a thumbnail.

We could either generate a thumbnail from a larger asset using GDAL, or could get it from Planet's data api - https://developers.planet.com/docs/apis/data/item-previews/ (but would need a user to supply an api key).
