Dont insert period in Name metadata #177

gutenberg_de_all_2023-02 is not a valid Name metadata (according to our convention). We should remove the period.

Definitly, it should be gutenberg_en or gutenberg_en_all IMO according to https://wiki.openzim.org/wiki/Metadata

@rgaudin Can we get it fix for next patch release?
