Only supported on ffmpeg 6.1 onwards

--enable-libplacebo, will likely also need:
--enable-libshaderc --enable-vulkan --enable-lcms2

will require also building https://github.com/haasn/libplacebo and its deps little-cms2, shaderc, libdovi(?)

do note that libplacebo often breaks compatibility with ffmpeg so versions will need to be carefully correlated
