Build is failing on most cookbooks right now because of issues with the out-of-date Sphinx theme. I will use the same temporary hack that was implemented in the ERA5 cookbook. Once work is completed on the new Sphinx theme in ProjectPythia/sphinx-pythia-theme#58, all the additional pins in the environment file should be removed. |

I'll merge this and then see if a new image gets build on the Binder with a more up-to-date Python version. |
