Remove text field requirement from Download and Extract

Is your feature request related to a problem? Please describe.
Some documents have more than one "text" field. Yet the current implementation of the download and extraction logic requires there to be a singular text object.

Describe the solution you'd like
Remove the requirement for a singular text field and allow users to have an arbitrary structure to the data.

Many tutorials cannot use the built in download and extract logic due to this.
