Remove contributors table

Please describe your 🚀 feature request.
Currently, there is an out of date contributors table in the simpa docs, which seems unnecessary given that it simpa does already show contributors.

Describe the solution you'd like
Either the table should be regularly updated (perhaps this can be automated?), or it should just be removed.
